Cossack Sparkling Wine2014
Our Cossack vintage sparkling wine is made from a blend of the Auxerrois Blanc (Auxerrois Blanc is a cross between Gouais Blanc and Pinot Noir, which have the same ancestry as Chardonnay), and Rulander grapes (a German synonym for Pinot Gris). It is made using the traditional bottle fermentation method and aged for at least four years on its lees. The name Cossack is taken from the Danebury trained 1847 Epsom Derby winner.
Lemon flowers and orange blossom the nose has a mix of fragrances the palate fresh at the start citrusy. Richer in the middle there is a hint of sweetness nectarines and a touch of white peach but the fresh fruit comes through at the back an attractive mix of pink grapefruit and tangerines. (93 points)
